What I Eat for Breakfast :) 3 Yummy Omelet Recipes

I love having a sturdy breakfast. Most days I actually eat eggs in some form, sometimes just boiled or scrambled, but I really like omelets.

I just made an omelet for me and my boyfriend. So today I want to share a few omelet recipes that I like!

It is great to start the day with some protein, it helps to keep the blood sugar even in the day. I think eggs are good for me..

This one I made yesterday evening, and my boyfriend told me I always make such good food ;)

Carrot & Pea Omelet (for 2 or 1 very hungry)

Failed flip :D

4 Eggs, lightly beaten
1 Onion, sliced in rings
1 Carrot, diced and pre-cooked
1 handful frozen Peas
1 tsp Coconut oil
½ tsp Paprika powder
Salt & Pepper

Heat up a pan with coconut oil on medium heat, fry the onion in paprika until softish. Then add carrot, peas, salt and pepper and stir fry for a few minutes. Lastly add the eggs and let it fry on medium-low heat until you can flip it, and let the other side get some color.

I usually divide the omelet in halves before flipping it, because otherwise I just make a mess of it..

Yum yum! I also like to get some fish in there sometimes, and sardines are great since they're rich in omega-3 and small which means easy to cook, and less toxins.

Sardine Omelet (for 2)

6 Eggs, lightly beaten
1 can Sardines, drained
1 Onion, sliced in rings
1 Carrot, diced and pre-cooked
1 tbsp fresh Dill, chopped
1 tsp Butter
Splash of Lemon juice (opt)
Salt & Pepper

Heat up a pan with butter, fry the onion for a while. Add the sardines which you mash into smaller bits, carrot, dill, lemon, salt and pepper, and stir fry a little while. Lastly add the eggs, and let it fry on medium-low heat until you can flip it, and let the other side get some color.

Oh and this next one was mighty good as well! :)

Italian Herb Omelet (for 1)

3 Eggs, lightly beaten
3 Sun-dried Tomatoes, sliced
1 Handful of Baby leaf Spinach
1 Onion, sliced
2 Cloves Garlic, chopped
1 tbsp Tomato paste
Italian herbs, fresh or dried = Basil/Thyme/Oregano/Marjoram
Some Paprika
Salt & Pepper
Butter

Heat up a pan with butter, fry the onion and garlic in paprika for a while. Add the spinach, sun-dried tomatoes, tomato paste, herbs, salt and pepper, and fry until the spinach is softer. Lastly add the eggs, and let it fry on medium-low heat until you can flip it, and let the other side get some color. ;)

I really like food-blogging and sharing recipes and even though this blog is about skin care, I think it fits, kind of, since what we eat has such a big importance for how our skin looks!

Grain-Free Coconut Pancake Recipe

So I made pancakes for breakfast the other day, and they turned out really yummy! To me these are very healthy, since I'm eating a grain-free, low carb, high fat, whole foods diet. Saturated fats are good fats, since they are vital for normal hormones. I wouldn't eat it every day though, I usually don't eat a lot of sweet fruit like banana as some say eating too much sugar can mess up the hormones.

Why don't I eat grains? I've noticed that my skin is clearer and smoother without them. A lot of people are sensitive to grains but don't know it, but it shows through red inflamed skin, oily skin, or acne. There are ways to make grains healthier though, for example through soaking, sprouting or making sourdough.

I ended up making two different versions, one coconut-banana, and the other coconut-cinnamon. They were easy to flip, and they tasted sweet (didn't taste too egg-y). Even the ones without banana were sweet, I guess it's because of the coconut. Here's the recipes that totally made about 14 pancakes:

Big Pile of Yummy Coconut Pancakes


Batter #1 - Like here but with 1 banana instead of the rapadura sugar. 


Batter #2 (almost the same)

3 eggs
3 tbsp melted butter
3 tbsp coconut milk
4 tbsp coconut flour (I didn't have real coconut flour, but it worked with shredded coconut that I put in the food processor for a while)
1 ½ tsp cinnamon
½ tsp baking powder
1/4 tsp salt

Whisk the ingredients together, heat a skillet with butter on medium heat, and pour 3 tbsp batter to make a pancake. As always with pancakes we need to be patient and not touch them before it's really time for flipping, about when they're dry on top.

Topping Tip:
½ banana
1 cup frozen strawberries
Blend smooth in food processor.

Topping Tip: Melted butter and cinnamon.
Cinnamon pancake, extra cinnamon, melted butter
Topping Tip: Coconut cream (the creamy part from a can of coconut milk) with berries or syrup.

My Day, Chapping Skin and Coconut Pancake Fantasies

Today I woke up from the phone ringing, I got asked if I wanted to work at a kindergarten today as someone in the regular staff was sick. I've been a substitute there before, but it was over a year ago since I spent 2010 in Spain. I went to work and all went well, it seems I may get to work there every now and then. Always nice to get out of the house and get a little extra income :)

My boyfriend and I just watched the movie "high fidelity" tonight. I remember watching it a long time ago but I didn't remember much about it. It's not that eventful, but I kind of liked it .

Right now I'm looking at my thumb, it's got chaps in the corners. I've got the same thing on my heels. Probably because of the dry cold weather up here, I mean I'm practically at the polar circle. Dry skin could be a sign that I'm not getting enough good fats too, but I do take a lot of omega-3 fish oil supplement and have avocado a few times a week so I'd think I've got that covered.

Anyways, I'm gonna put some coconut oil on the chapping skin before I go to bed, that usually helps. I also use something called badger balm or something, it's made of several organic plant oils. It's pretty good.

I'm thinking about making pancakes for breakfast tomorrow, but a (imho) healthy version. Maybe something like this:  Coconut flour pancakes. Mmm they seem heavenly! Not long ago I converted to a lowish carb grain-free eating habit, something I think is great for the skin amongst other things.
My usual breakfast is an omelet, or a smoothie of frozen berries, some greens, avocado or egg, whey protein and a little bit banana. Yummers :)

Welcome to My Blog About All Natural Skin Care!


Hi! I'm Ingela and I just created this blog :)

I wanted to start a blog to be able to share my thoughts and experiences of skin care the natural way.

Here I'll write about how I take care of my skin, things I'm trying out, and maybe some personal posts in the mix. Mainly I'm just starting this blog for my own amusement ;)

I'll probably write about topics like anti aging skin care, how to get healthy and glowing skin, oily skin care, and some common skin problems.

I'm Swedish and currently live in northern Scandinavia, at the border of Sweden and Finland. I'm interested in living a healthy life and having youthful and clear skin as long as I can.

I like spending time with my boyfriend, taking walks with my little doggy, watching movies, and learning things like different crafts. Oh, and travelling is fun too!
